You need to have two tablespoons of extra olive virgin oil, one and a half cups of long grain rice, one quart of chicken stock, four pieces skinless and boneless chicken breasts, two tablespoon of butter, a half cup of apple cider, a cup of frozen peas, a tablespoon of flour, two chopped scallions, cheddar cheese and salt and pepper to taste.

Now using a saucepan, pour a tablespoon of olive virgin oil in a pan over a medium heat. Add the rice and cook it for three to four minutes until it turn into light brown in color. Pour in the chicken stock and wait for it to boil. Lessen the heat to medium to low then cover the rice for about sixteen to eighteen minutes.

While waiting for the rice to be cook, pour in a tablespoon of oil in a pan and cook the chicken breast for about ten to twelve minutes until the juices are all clear. You can cook the breast for about five to six minutes on each side. Now carefully remove the chicken to a plate and cover it using a foil. Add a tablespoon of butter to a skillet then sprinkle it with flour and cook it for a minute. Then carefully whisk it with the apple cider and a cup of chicken stock. Now you should thicken the gravy for a minute then season it to taste using the salt and pepper.

Now, while you are waiting for the chicken to be cook. Pour a cup of water in a pan and bring it to boil. Now add the green beans and salt and cover it. Let it cook for three to four minutes. Drain the beans and put it in a hot pan, including the scallions, a tablespoon of butter and salt and pepper to taste.

Lastly, pour in the apple gravy over your chicken breast and serve it with rice and green beans on the side.
